Stuffed Grape Leaves

Ingredients

Grape leaves

  • 10 oz prepared grape leaves

Filling

  • 1/4 cup olive oil
  • 3 onions, grated
  • 1 1/2 cups rice, rinsed
  • 1 tbsp currants
  • 1 tbsp tomato paste
  • 3/4 tsp salt
  • 1 tsp black pepper
  • 1 tsp allspice
  • 1 tsp dried mint
  • 1/2 tsp cinnamon
  • 1 cup boiling water

Water for simmering

  • 2 cups boiling water
  • 1/4 cup olive oil

Instructions

  1. Fry the onions in olive oil for 3 minutes.
  2. Add in the rice, spices, currants & tomato paste; stir for 2 minutes.
  3. Add 1 cup of boiling water, and simmer on low for 5 minutes.
  4. Fill each grape leaf with one heaping spoonful of the filling, and wrap tightly (like you would wrap up a burrito!)
  5. Put a layer of empty grape leaves on the bottom & sides of a deep pot, and line the pot with the stuffed leaves.
  6. Add boiling water & oil. Cover and simmer for 35 minutes.

**I served this with garlic yogurt & melted butter mixed with some dried mint and paprika in it**
