Snickerdoodles – Keto

Ingredients

  • 1 1/4 cups almond flour
  • 2 tbsp coconut flour
  • 1 tsp psyllium husk
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 egg
  • 1/2 cup erythritol
  • 1 tsp vanilla

Cinnamon Sugar

  • 2 tbsp erythritol
  • 1 tsp cinnamon

Instructions

  1. Mix all of the cookie ingredients together & roll in the cinnamon sugar.
  2. Bake for 7-8 minutes at 375.
  3. Let the cookies cool on the pan for 10 minutes.

The cookies taste wonderful with coffee. They also make a great Keto pie crust if you run them through the food processor with some melted butter!
