Saffron Cardamom Chia Pudding – Keto

Instead of overnight oats, try overnight chia!

Ingredients

  • 1/2 tsp ground saffron
  • 3 ice cubes
  • 2 cups milk
  • 1/4 cup erythritol (or sugar for non-keto)
  • 1 tbsp rose water
  • 1/2 tsp ground cardamom
  • 1/4 tsp cinnamon
  • 1/3 cup chia seeds
  • 2 tbsp coconut cream

Instructions

  1. Mix the saffron & ice cubes in a cup and let it melt.
  2. Bring the saffron water & remaining ingredients to a boil in a saucepan and turn off the heat.
  3. Pour the pudding into 2 jars & refrigerate overnight. Top with slivered pistachios if desired.
