Instead of overnight oats, try overnight chia!
- 1/2 tsp ground saffron
- 3 ice cubes
- 2 cups milk
- 1/4 cup erythritol (or sugar for non-keto)
- 1 tbsp rose water
- 1/2 tsp ground cardamom
- 1/4 tsp cinnamon
- 1/3 cup chia seeds
- 2 tbsp coconut cream
- Mix the saffron & ice cubes in a cup and let it melt.
- Bring the saffron water & remaining ingredients to a boil in a saucepan and turn off the heat.
- Pour the pudding into 2 jars & refrigerate overnight. Top with slivered pistachios if desired.
