Radish Salmon Quiche – Keto

Ingredients

  • 1/4 cup butter or ghee
  • 2 cups radishes, finely sliced
  • 1 onion, finely sliced
  • 1 cup spinach
  • 4-6 oz salmon fillet
  • 1/3 cup fresh mint
  • 1/3 cup fresh cilantro
  • 6 eggs
  • 1/2 cup milk
  • 1 tsp salt
    • Optional: Chopped brie for the top

Instructions

  1. Fry the radishes & onion in butter over medium heat for about 7 minutes.
  2. Line the bottom of a casserole dish with the radishes & onions.
  3. Fry salmon & greens for 10 minutes, then place them on top of radishes & onions.
  4. Mix eggs, milk & salt. Pour the egg mixture in the casserole dish.
  5. Bake for 30 minutes at 350.
  6. Place brie pieces on top of the quiche and broil for 5 minutes.
