Pumpkin Protein Breakfast Cookies

Ingredients

  • 1 1/2 cups oats
  • 1 1/2 cups oat flour
  • 1/2 cup almond flour
  • 1/2 cup protein powder
  • 2/3 cup erythritol (or sugar)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp psyllium husk
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp cardamom
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 cup pumpkin puree
  • 3 eggs
  • 1/2 cup coconut oil
  • 1/2 cup dark chocolate chips
  • 1/2 cup pumpkin seeds

Instructions

  1. Mix all of the ingredients together & bake for 10 minutes at 350 on a parchment paper lined baking try.
    • 10 minute baking time is for a 2 tbsp serving size per cookie.
