
Ingredients
- 1 1/2 cups oats
- 1 1/2 cups oat flour
- 1/2 cup almond flour
- 1/2 cup protein powder
- 2/3 cup erythritol (or sugar)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp psyllium husk
- 2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp cardamom
- 1/4 tsp cloves
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 cup pumpkin puree
- 3 eggs
- 1/2 cup coconut oil
- 1/2 cup dark chocolate chips
- 1/2 cup pumpkin seeds
Instructions
- Mix all of the ingredients together & bake for 10 minutes at 350 on a parchment paper lined baking try.
- 10 minute baking time is for a 2 tbsp serving size per cookie.
