
For those American expats who want a taste of fall, but cannot get it in their host country!
Ingredients
Scones
- 2 1/4 cups flour
- 1/2 cup almond flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp cardamom
- 1/4 tsp cloves
- 1/4 tsp allspice
- 1/4 cup honey
- 1/4 cup coconut sugar
- 1/2 cup butter, cold & cubed
- 2/3 cup pumpkin puree
- 1/4 cup buttermilk
- 1 egg
- 2 tsp vanilla
Icing # 1
- 1 cup swerve (or powdered sugar)
- 2 tbsp heavy cream
Icing # 2
- 1/2 cup swerve (or powdered sugar)
- 1 tbsp pumpkin puree
- 1/2 tsp pumpkin pie spice
- 1 tbsp heavy cream
Instructions
- Mix all of the scone ingredients together & shape into a circle about that is about 1 ” thick.
- Cut the dough into 8 slices, but do not separate them.
- Bake for 10-12 minutes at 425. Let the scones cool for 20 minutes.
- Mix together icing # 1 ingredients and drizzle over the scones.
- Mix together icing # 2 ingredients and drizzle over the scones.
