Pumpkin Pie Scones

For those American expats who want a taste of fall, but cannot get it in their host country!

Ingredients

Scones

  • 2 1/4 cups flour
  • 1/2 cup almond flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp cardamom
  • 1/4 tsp cloves
  • 1/4 tsp allspice
  • 1/4 cup honey
  • 1/4 cup coconut sugar
  • 1/2 cup butter, cold & cubed
  • 2/3 cup pumpkin puree
  • 1/4 cup buttermilk
  • 1 egg
  • 2 tsp vanilla

Icing # 1

  • 1 cup swerve (or powdered sugar)
  • 2 tbsp heavy cream

Icing # 2

  • 1/2 cup swerve (or powdered sugar)
  • 1 tbsp pumpkin puree
  • 1/2 tsp pumpkin pie spice
  • 1 tbsp heavy cream

Instructions

  1. Mix all of the scone ingredients together & shape into a circle about that is about 1 ” thick.
  2. Cut the dough into 8 slices, but do not separate them.
  3. Bake for 10-12 minutes at 425. Let the scones cool for 20 minutes.
  4. Mix together icing # 1 ingredients and drizzle over the scones.
  5. Mix together icing # 2 ingredients and drizzle over the scones.
