
Ingredients
Cake
- 2 cups flour
- 2 tsp psyllium husk (if using gluten free flour)
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/4 tsp cloves
- 1/4 tsp cardamom
- 1 cup butter, softened
- 1 1/2 cups coconut sugar
- 2 cups pumpkin puree
- 3 eggs
- 1/4 cup whiskey
Frosting
- 2 cups cream cheese
- 1 cup butter, softened
- 1/4 cup heavy cream
- 3 – 4 cups swerve (or powdered sugar)
Instructions
- Mix all of the cake ingredients together, and pour into 2 greased cake pans. Bake for 25-28 minutes at 350.
- Let the cakes cool completely and carefully cut each cake into 4 layers.
- Mix together all of the frosting ingredients.
- Spread the frosting on each layer & stack the layers. Garnish with 3/4 cup pomegranate seeds if desired.
