Layered Pumpkin Spice Cake

Ingredients

Cake

  • 2 cups flour
  • 2 tsp psyllium husk (if using gluten free flour)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp cardamom
  • 1 cup butter, softened
  • 1 1/2 cups coconut sugar
  • 2 cups pumpkin puree
  • 3 eggs
  • 1/4 cup whiskey

Frosting

  • 2 cups cream cheese
  • 1 cup butter, softened
  • 1/4 cup heavy cream
  • 3 – 4 cups swerve (or powdered sugar)

Instructions

  1. Mix all of the cake ingredients together, and pour into 2 greased cake pans. Bake for 25-28 minutes at 350.
  2. Let the cakes cool completely and carefully cut each cake into 4 layers.
  3. Mix together all of the frosting ingredients.
  4. Spread the frosting on each layer & stack the layers. Garnish with 3/4 cup pomegranate seeds if desired.
