Easter Bread

Ingredients

Dough

  • 2 1/2 cups bread flour
  • 1 tbsp yeast
  • 1/4 cup honey
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup milk, warm
  • 4 eggs
  • 1/2 cup butter, softened
  • Zest of 2 lemons and 1 orange
  • Juice of 1 lemon
  • 1 cup slivered almonds
  • 1 cup dried fruit (I used orange peels & raspberry!)
  • 1 cup dried cranberries

Topping

  • 2 egg whites
  • 1/4 cup honey
  • 1/4 cup almond flour
  • 1/2 cup slivered almonds
  • 1/4 cup slivered pistachios

Instructions

  1. Knead together the flour, yeast, honey, salt, cinnamon, milk, eggs and butter. Cover & let the dough rise for 1 hour.
  2. Mix together the remaining dough ingredients in a small bowl & mix it into the risen dough.
  3. Place the loaf into a greased springform pan, cover, and let it rise for 3 hours.
  4. Bake the loaf for 20 minutes at 400.
  5. For the topping, mix together the egg whites, honey and almond flour. Brush this mixture on top of the loaf, and sprinkle the slivered almonds & pistachios on top.
  6. Lower the heat to 350 & bake for an additional 20 minutes.
