
Ingredients
Dough
- 2 1/2 cups bread flour
- 1 tbsp yeast
- 1/4 cup honey
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup milk, warm
- 4 eggs
- 1/2 cup butter, softened
- Zest of 2 lemons and 1 orange
- Juice of 1 lemon
- 1 cup slivered almonds
- 1 cup dried fruit (I used orange peels & raspberry!)
- 1 cup dried cranberries
Topping
- 2 egg whites
- 1/4 cup honey
- 1/4 cup almond flour
- 1/2 cup slivered almonds
- 1/4 cup slivered pistachios
Instructions
- Knead together the flour, yeast, honey, salt, cinnamon, milk, eggs and butter. Cover & let the dough rise for 1 hour.
- Mix together the remaining dough ingredients in a small bowl & mix it into the risen dough.
- Place the loaf into a greased springform pan, cover, and let it rise for 3 hours.
- Bake the loaf for 20 minutes at 400.
- For the topping, mix together the egg whites, honey and almond flour. Brush this mixture on top of the loaf, and sprinkle the slivered almonds & pistachios on top.
- Lower the heat to 350 & bake for an additional 20 minutes.
